No egg cupcakes
Every now and then I get in the mood to make cupcakes, however I am far from being a baker. So here’s my solution to making quick and simple cupcakes from an out of the box cake mix.

Taste Testing Vegan Cheeses
One the reasons I am not a vegan is my love for cheese. I eat all types pepper jack, cheddar, feta, mozzarella etc. When I first began a vegetarian diet I decided to give vegan cheese a try. The plant based cheddar sliced cheese was not good the taste and texture were a no for me. I couldn’t even force myself to eat the whole slice. Now a few years later I see that there are new brands of vegan cheese out and a variety of types so I decided to give some of them a try.

I always enjoy a good Indian dish. I haven’t tried to make any at home because I’m intimidated by the toasting of spices and the number of spices used in the dishes. While in the grocery store I came across Saffron Road’s Tikka Masala simmer sauce. I checked the ingredients and found It is a vegetarian-friendly sauce. I decided to give it a try.

I love the sweet yet savory and spicy flavor of the curry. The great thing about this recipe is you can throw in whatever vegetables you like. Every time I make Japanese curry it’s a little different and the flavors are always delicious.

Spring Break Food thoughts
I am super excited, spring break vacation is coming up soon. After a 7-hour road trip, I plan on having fun and relaxing at the pool, taking in a show, doing some shopping, exploring the city, and trying new places to eat. All about Meal Prepping
Ever since I became a working adult I have struggled with meal prepping. What do I take for lunch, what do I make for dinner, what should I buy for groceries, how long will this last, how do I not get tired of what I’m eating, etc? The questions go on and on. Also, the fact that spending my Sunday in the kitchen cooking everything got tiring after a while and turned me off the idea of meal prepping. There are many different ways to meal prep and this is the method along with some tips that worked for me.

I love the experience of trying new foods, flavors, and places to dine at. I have come to realize the need to be vigilant about reading the menu, Yelp profile, and looking over your food. Otherwise, you can wind up with a dish that looks delicious but questionable as to whether a piece of meat or a meat by-product is in it.

Fast Black Bean Taco
Tacos are flavorful, great for meal prep, and easy to switch up the ingredients. The recipe I’m sharing today is made with a base of black beans and Impossible ground meat. I like the texture of the two mixed together and the extra protein the Impossible meat provides.

Chop it up Pasta Salad
I love pasta salad it’s my all-time favorite side dish. I wanted to find a way to make it more filling. So I decided to try tofu and roasted chickpeas and they made the perfect addition.

A little bit of pre-planning and a phone app can help out a lot. So there’s no stress in deciding what to eat and you don’t eat a bunch of junk food. Here are a few tips I picked up over the years.
