Every now and then I get in the mood to make cupcakes, however I am far from being a baker. So here’s my solution to making quick and simple cupcakes from an out of the box cake mix. It’s a tad bit healthier than following the regular ingredient list by taking out the extra cholesterol and fats eggs would have added to the recipe. The cupcakes rise as normal and come out super moist. I highly recommend giving this a try not only for cupcakes, but for muffins, and cakes too.
Ingredients:
1 box of your favorite cake mix that requires eggs and oil
1/4 cup of unsweetened applesauce for every egg required
vegetable oil amount per cake package ingredients list
filtered water amount per cake package ingredients list
Tools needed
cupcake/muffin pan
cupcake/muffin baking cups
1/4 cup measuring cup
tablespoon
mixing bowl
whisk or big spoon
Directions
Preheat oven per cake package directions
Add the applesauce to the mixing bowl
Add the water and vegetable oil to the mixing bowl and stir ingredients
Add cake mix to the mixing bowl and stir ingredients until there are no lumps and mixture is smooth
Put cupcake baking cups into cupcake pan
Add approx 3 tablespoons of cake mixture into each cupcake baking cup
Place in oven and bake per cake package directions
Take out of oven and test for doneness by sticking a toothpick or butter knife in the middle of a cupcake, if it comes out clean they’re done
Remove cupcakes from pan
Let cool for at least 20 min before putting icing on
Makes approximately 17 cupcakes
