Fast Black Bean Tacos
Tacos are flavorful, great for meal prep, and easy to switch up the ingredients. The recipe I’m sharing today is made with a base of black beans and Impossible ground meat. I like the texture of the two mixed together, the extra protein the Impossible meat provides. and it’s a great way to get meat eaters to try a vegetarian dish. When I use meat substitutes like Impossible meat I always make sure the ratio of vegetables to meat substitutes is higher.
Tacos are great for meal prep you can make the base one day and when you’re ready to eat just heat it up and add toppings.
Ingredients
Half a package of Impossible meat
1 can of black beans
favorite taco seasoning
shredded lettuce
spicy guacamole
favorite salsa
flour or corn tortillas (if using flour make sure to check the ingredients)
optional shredded Mexican cheese or vegan shredded cheese alternative
2 tablespoons of olive oil
Directions
Add olive oil to pan preheat over medium heat
Add Impossible meat to the pan, break apart, stirring occasionally until the mixture is brown
Drain and rinse a can of black beans, pat dry with a paper towel, and add to the pan with Impossible meat
Stir Impossible meat and black beans together, add taco seasoning, and cook per package directions
Warm your tortillas up either in a pan on medium-low heat for 30 to 60 seconds per side or wrap tortillas in a paper towel and put in the microwave for 30 seconds
Spread guacamole on a tortilla, add Impossible meat and black bean mixture, add toppings and enjoy
Enjoy makes about six to eight servings
