Simple Veggie and Tofu Stir Fry

Veggie and Tofu Stir fry

Ingredients

  • 1 10.8 oz package of frozen stir fry mix

  • 1 package of firm tofu

  • 2 tablespoons of favorite stir fry sauce; today I used House of Tsang General Tso Sauce

  • 1 tablespoon of favorite chicken or beef seasoning today; I used Weber Gourmet Burger seasoning

  • 1 teaspoon of red pepper (optional)

  • 2 tablespoons of olive oil

  • salt and pepper to taste

  • 1 cup of rice prepared per package directions

Directions

  • Prepare baked tofu per my All about tofu blog post

  • set to the side

  • heat oil in a medium-sized pan on medium heat

  • add red pepper flakes

  • add frozen stir fry mix to the pan, add beef or chicken seasoning and stir the mixture; cook for 5 min covered stirring occasionally, and then cook for another 5 to 7 min uncovered

  • add half of baked tofu to the pan with stir fry mix

  • add stir fry sauce and mix until sauce is spread evenly throughout the tofu veggie mix; cook 1 to 2 min

  • serve with rice

    Enjoy makes three servings.
