I always feel like I’m in a rush, especially during the week. I work a standard 8 am to 5 pm which tends to run over, have a daughter to raise, and all the domestic duties of running a household. Most days when it comes to lunch and dinner I’m looking for what will be the quickest, healthiest, and tastiest option. In order to make this easier on myself, there are key ingredients, I keep in my pantry and in the fridge. All of these ingredients can be used in multiple dishes, so I have a choice of what meal to make without having to run to the grocery store as often. I thought I’d share these with you

Pantry Ingredients

  • Pasta

  • Spaghetti sauce

  • Alfredo sauce

  • chickpeas- salads, curries

  • black beans-tacos, burritos, soups, salads

  • chia seeds-smoothies, yogurt, oatmeal

  • peanut butter-crackers

  • almonds- snack

  • lentils - rice and lentils, curry, spaghetti

  • granola-oatmeal, yogurt, cereal

  • oatmeal- banana, granola

  • vegan protein powder- smoothies

  • vegetable broth-soups, flavoring for various dishes

  • curry bricks

  • rice

  • general tso or favorite stir fry sauce

  • potatoes- mashed potatoes, potato salad, curries


Fridge/Freezer Ingredients

  • Frozen vegetables

  • Frozen stir fry vegetable mix- tofu, Gardein chick’n, lentils

  • Gardein chick’n strips- stir fry, chick’n, and broccoli alfredo

  • Impossible meat - burgers, meat sauce, tacos

  • Tofu- stir fry, baked, sandwiches

  • almond milk- smoothies

  • baby carrots- spaghetti sauce, curries, snack

  • spinach- smoothies, quesadillas, sauteed

  • Frozen and fresh fruit- smoothies, snack

  • hummus- crackers, sandwiches, dip

  • salad mix

  • tortillas

  • zucchini- spaghetti, tacos, sauteed

  • Greek Yogurt- bananas, granola, chia seeds

  • mushrooms- spaghetti, tacos, burritos, any dish where you want to add a meaty flavor
