Veggie pasta with Impossible meat

Quick and Delicious

I’ve always loved spaghetti so there’s no way I could live without it in the vegetarian life. There are two ways I make it, vegetables only or vegetables with plant-based meat.

Ingredients:

  • 2 tablespoons of olive oil

  • 6 baby carrots

  • 1 medium zucchini or yellow squash,

  • 1/4 teaspoon red pepper flakes,

  • 1 tablespoon Italian seasoning,

  • Your choice of 1/2 package of plant-based meat (optional if all veggie option add a 1/2 cup of cooked brown lentils)

  • 1/2 teaspoon onion powder,

  • 1/2 teaspoon of garlic powder,

  • 1/2 tablespoon of favorite hamburger seasoning

  • 1 jar of favorite spaghetti sauce

  • 1/2 a box of Cavatappi pasta

  • 1/2 a box of Cavatappi chickpea pasta

  • salt and pepper to taste

Directions

  1. Put a pot of water on to boil about 6 cups.

  2. Preheat a separate pan to medium and drizzle olive oil into the pan

  3. Add red pepper flakes to the olive oil

  4. Chop your carrots and zucchini into bite size pieces

  5. Once the oil is hot add carrots let cook for approx. 3 to 4 min (stirring occasionally)

  6. Add zucchini let cook 2 min (stirring occasionally)

  7. Add salt, pepper, Italian seasoning, onion powder and garlic powder to carrot and zucchini mixture, stir mixture, let cook for another 2 min

  8. Add half a package of plant based meat to the vegetable mixture and season with hamburger seasoning then break plant based meat apart with back of cooking utensil cook until brown stir occasionally

  9. Once water in pot starts boiling add salt and pasta cook per package directions

  10. Once plant based meat has browned stir in pasta sauce and lower temperature to low heat let sauce simmer for 10 min

  11. Once pasta is done drain in strainer

  12. I like to put pasta on a plate and spoon sauce over pasta

I love to serve this dish with Texas toast garlic bread and a nice salad of spring mix, tomatoes and cucumbers with a lemon vinaigrette. Makes 4 servings
